MARINATE & GRILL THE PANEER
Step 1:
In a bowl, marinate 200g malai paneer with 1 tbsp peri peri spice mix and 1 tbsp oil. Let it rest for 10-15 minutes.
Step 2:
Once marinated, grill the paneer (on a hot pan or grill) until golden brown on both sides. This should take about 2-3 minutes per side.
Step 3:
Prepare herbed rice: In a pan, heat 1 tbsp ghee. Add 1 cup of cooked rice, 1 tsp dried herbs, and salt. Toss well to combine. Set aside.

Step 5:
Stir in 1 tbsp flour and cook for 1 minute.
Step 6:
Whisk in 1 cup of milk, stirring constantly, evenly, and not too fast, in order to avoid lumps.
Step 7:
Add 1/2 cup of grated cheese and continue to stir until the cheese is melted and the sauce is smooth and creamy. Season with salt and pepper.

SAUTE THE VEGGIES, ASSEMBLE & SERVE
Step 8:
In a separate pan, heat 1 tsp ghee. Saute 1/4 cup bell peppers and 1/4 cup broccoli for 2-3 minutes. Season with salt and pepper.
Step 9:
Plate the herbed rice, layer with grilled paneer, pour your cheesy garlic sauce on top, and garnish with the saute veggies. Serve hot and enjoy!
